Quinoa, poached salmon and thyme salad with a maple syrup and lemon dressing

Ready in: 20 minutes

Ingredients (serves 2)
  • 120 g uncooked quinoa
  • 160 g poached salmon, flaked
  • Juice of 1 lemon
  • Fresh thyme leaves
  • Maple syrup
  • Salt & pepper
  • Extra virgin olive oil
Cooking instructions
  1. Cook quinoa in salted water for 20 minutes.
  2. Break up poached salmon into flakes and sprinkle with lemon juice.
  3. Mix quinoa and salmon, scatter with thyme leaves (make sure you discard the thyme’s woody stems), season with salt & pepper and mix well.
  4. Drizzle with maple syrup and serve.
