Ingredients (serves 2)
- 120 g uncooked quinoa
- 160 g poached salmon, flaked
- Juice of 1 lemon
- Fresh thyme leaves
- Maple syrup
- Salt & pepper
- Extra virgin olive oil
Cooking instructions
- Cook quinoa in salted water for 20 minutes.
- Break up poached salmon into flakes and sprinkle with lemon juice.
- Mix quinoa and salmon, scatter with thyme leaves (make sure you discard the thyme’s woody stems), season with salt & pepper and mix well.
- Drizzle with maple syrup and serve.
